I have a very sweet tooth. In my world, enjoying fresh baked goods is bliss on any given dull, rainy day – or really just anytime. However, I am not as fond of fiddling with complicated recipes with many ingredients to make something yummy to go with my coffee. Needless to say then, I was very happy when I came across this recipe. With just a few ingredients, it makes a delicious cake – and this without even turning on the oven! But best of all: It looks absolutely stunning . I am totally going to test this out the next time my sweet tooth calls for a quick fix. What you need: Base: 200 gr digestive biscuits 75 gr unsalted butter 75 gr peanut butter Top layer: 200 gr chocolate with high cocoa (55-70 %) 4 tablespoons peanut butter
Begin by dropping your biscuits in a blender and blend until completely crumbled. Meanwhile, melt the butter in a saucepan.
Add 100 gr of peanut butter and the melted butter to the crumbled biscuits. Mix until blended.
Cover a baking tray with high edges with parchment paper. Using a large spoon, spread the batter evenly across the tray.
In a saucepan, melt the chocolate with two tablespoons of peanut butter.
In a separate saucepan, melt two tablespoons of peanut butter. This will later be drizzled on top.
Pour the melted chocolate/peanut butter mix over the batter in the baking tray until it is completely covered.
Then have fun drizzling the melted peanut butter on top.
You can use a knife to create patterns by rotating the front and back of the circles.
Place the pan in the fridge for two hours.
Cut the cake into small squares, and serve! Isn’t it amazing how easy it is to create such a pretty desert, without even turning on the oven?
